A Little History
This nutritious dish is extremely cheap and simple to make and was most likely introduced in the United States during the great waves of European immigration of the nineteenth century. The potato salad recipes back then only contained diced potatoes, onion, and mayonnaise.
As, time passed people experimented with the recipe and added a substitute dressing such as sour cream, mustard, pepper, pickles, and chives. Depending on the recipe, some even added hard-boiled eggs, celery, or peppers.
Today, it has become a staple accompaniment to complement our braai’s, picnics, or holiday meals. This potato salad recipe serves four people and takes one hour to prepare and cook.
What You’ll Need To Make Potato Salad
- 600 g Potatoes
- 2 Hard-boiled eggs
- 3 Spring Onions
- 10 Pickles
- 2 Tablespoons mayonnaise
- 1 Tablespoon yellow mustard
- 2 Tablespoons vinegar
- Pinch of Salt Pinch of Pepper
How To Make Potato Salad
- In a large pot, boil the potatoes for 40 minutes.
- Once the potatoes are cooked, set them aside until they are cool enough for you to handle, then peel and cut into small cubes and put it into a glass bowl.
- Next, add the hard-boiled eggs, spring onions, pickles and remaining ingredients to the potatoes and mix with the dressing.
- Finally, place the potato salad in the fridge for at least one hour before serving.
Tip: For some colouring and a bit of flavour, sprinkle a pinch of paprika over the potato salad.
