A Little History
Beef Stroganov or Beef Stroganoff is a dish made of pieces of sautéed beef served in a sauce with sour cream that originated from Russia. From its origins in the mid-19th-century it has become quite the popular dish around the world, with a vast variation from the original recipe.
This classic beef Stroganoff dish is named after a member of the influential Stroganov family, legend has it that it attributes its invention to French chefs working for the family. Although this is just a legend there are several researchers pointing out that the recipe is a refined version of older Russian dishes.
What you’ll need to make Classic Beef Stroganoff
- 30 g Butter or Margarine
- 15 ml Olive Oil
- 725 g beef strips
- 1 Large onion, chopped
- 250 g White mushrooms, sliced
- 2 Garlic cloves, finely chopped
- 1 Handful of thyme with the leaves picked off the stem
- 2 g Paprika
- 25 g Cake Flour, seasoned with salt and black pepper
- 15 ml Tomato Paste
- 15 ml Dijon Mustard
- ½ Beef stock cube, dissolved in 200 ml hot water
- 250 g Sour Cream
- Parsley to garnish
How To Cook Classic Beef Stroganoff
- Start off by heating half the butter and half the oil. Over a high heat, toss and turn the beef strips until they’re brown all over before removing them from the pan. Do the same with the other half of the strips using the remaining oil and butter. Once done set aside for later.
- In the same pan add the onion and mushrooms and shake over medium heat for 3-5 minutes until tender. Make sure to add in the garlic and thyme towards the end.
With the tomato paste, mustard and hot stock, combine the paprika and seasoned flour. Then, add in the browned beef strips, and simmer on low, for 3- 5 minutes covered. Be sure not boil or overcook. - For the last step, stir in the sour cream off the heat and preferably serve immediately, but if not, you may need to adjust and perfect the sauce consistency. Make sure that while you’re re-heating the dish to add a dash of sherry, brandy, milk or beef stock.
Serves 5 people.
