A Little History
This banting waffle recipe is extremely easy to prepare and makes for a nutritious, delicious breakfast or afternoon snack. But first a bit of history.
Many culinary historians believe that waffles trace back to ancient Greece, where Greek chefs used metal plates attached to long wooden handles to roast flat cakes. These cakes were called “Obelios” by the Greeks and wasn’t as sweet as the modern waffles we know today.
Many years later in Medieval Europe the Catholic Church made similar unleavened wafers called “Oublies” out of grain flour and water. As the years went by, eventually, other ingredients made their way into the recipes like cream, honey, butter, and spices. They also added leavening agents to make the wafers thicker and doughier.
The thicker wafer soon became known as the waffle we all know and love today.
Note: You can adjust the recipe to get more waffles.
What You’ll Need To Make a Banting Waffle
- 3 Egg whites
- 2 Tablespoons of coconut flour
- 2 Tablespoons of milk
- ½ Teaspoon baking powder
- Pinch of sweetener to taste
How To Cook a Banting Waffle
- First, you’ll want to whip two of the egg whites to stiff peaks. To make things easier you can either use a hand mixer, eggbeater, or if you want a bit of a workout, a whisk.
- Once your egg whites have stiff peaks, stir in the baking powder, milk, coconut flour, sweetener, and your choice between one whole egg or one egg white. (It all depends on how much fat you want your waffles to have.) You can use both if you prefer.
- Next, you’ll want to heat up your waffle iron to the highest temperature. Make sure to either use grease or non-stick spray.
- Pour the batter into the waffle iron and cook for 3 to 4 minutes until browned.
- Note: Keep in mind that you’re using coconut flour so the banting waffle will have a coconutty taste. Bon Appétit!
