A Little History
Puttanesca is a long time Italian favorite, and baby marrow puttanesca pasta puts a healthy twist on this classic recipe. In 1844, Ippolito Cavalcanti, in his Cucina teorico-pratica (Theoretical-practical cuisine), included a recipe from popular Neapolitan cuisine. He called it Vermicelli all’olio con olive capperi e alici salse. (Traditional pasta with olive oil, capers, and anchovies’ sauce)
According to Wikipedia, the various recipes in Italian cookbooks that date back to the 19th century describe pasta sauces like modern puttanesca. For example, the Neapolitan recipe contains no anchovies, unlike the version popular in Lazio and sometimes spices are added.
Traditionally, the sauce is served with spaghetti, but because this is a healthy recipe we substituted the spaghetti with baby marrow spirals. This baby marrow puttanesca pasta recipe is a healthy, delicious, and easy to make pasta alternative recipe.

What you’ll need to make Baby Marrow Puttanesca Pasta
- 30 ml Olive oil + 30ml (extra)
- 1 Large onion (chopped)
- 4 cloves of garlic (crushed)
- 3 – 4 anchovy fillets
- 1 handful of capers
- 125 ml Calamata olives (pitted and chopped)
- 10 ml Chilli flakes
- 2 Tinned diced tomatoes (410g tin)
- 500 g Baby marrow spirals
How To Cook Baby Marrow Puttanesca Pasta
Puttanesca Sauce
- Heat just enough olive oil to cover the bottom of your pan. Add the onion, crushed garlic and 3 or 4 anchovies.
- Sauté the anchovies until they start to disintegrate in the oil and the garlic browns and softens.
- Next, add the chilli flakes, capers and olives and fry for a minute. Add the tinned diced tomatoes and simmer, stirring occasionally for a few minutes (4 – 6 minutes). Once done, put one side to cool.
Baby Marrow Pasta
- In a separate pan, heat the extra olive oil and toss in the baby marrow spirals and stir-fry quick until they are softened but not limp.
- Take your puttanesca sauce and pour it through the baby marrow spirals and sprinkle with some Parmesan cheese and serve hot.
