Thanks to this healthy dish that utilizes the power of cauliflower to create the perfect pizza base, anyone that tells you that you can’t have pizza on a Monday will eat those words. This low-carb cauliflower pizza recipe is easy to make and takes 1 hour to prepare and serves 4 people.

What You’ll Need To Make Low-Carb Cauliflower Pizza

Pizza Toppings

  • ¼ cup (60ml) Tomato pasta sauce
  • ¼ cup (60ml) Pesto
  • 100g Mozzarella cheese, thinly sliced
  • 250g Cherry tomatoes, halved
  • Baby basil leaves (to serve)

Cauliflower Dough

  • 700g Cauliflower
  • 1 Tablespoon olive oil
  • 30g grated parmesan (plus extra to serve)
  • 2 eggs

How To Make Low-Carb Cauliflower Pizza

  1. Firstly, preheat your oven to 140°C with the thermo-fan on. Next, take two baking trays and line them with baking paper.

Cauli-flour Dough

  1. Chop up the cauliflower and place in a food processor and pulse, until the cauliflower is finely chopped. Then tip your finely chopped cauliflower into the center of a clean kitchen cloth, place over a bowl and remove any excess liquid by squeezing. Spread the cauliflower over the baking trays for 15 minutes to dry out. Remove and set aside to cool.
  2. In a food processor, add the cauliflower, almond meal, eggs, olive oil, parmesan, salt, and pepper. Whiz the mixture until you have smooth dough, scraping the sides if necessary.
  3. Increase the oven temperature to 180°C. Take 1 baking tray lined with bake paper and spread the cauliflower mixture to form a circle. Next, using a piece of plastic wrap, press the mixture down until your base is about 1cm thick. Place in the oven and bake for 25 minutes until cooked through and golden. Remove from oven and increase the temperature to 250°C.

Making The Pizza

  1. Spread the tomato pasta sauce and half of the pesto over the cauliflower base. Top with the mozzarella cheese and bake for 5 to 10 minutes or until the cheese is melted and bubbling.
  2. While waiting for the cheese to melt, toss the cherry tomatoes and remaining pesto in a bowl and season with pepper. Take the pizza out of the oven and top with the leftover pesto tomato and basil. Scatter over extra parmesan to serve.
