The Ingredients You’ll Need to Create Your Malva Pudding with Amarule Butterscotch Sauce
Malva Pudding
- 340g cake flour
- A pinch of salt
- 1 teaspoon baking powder
- 100g butter, at room temperature + extra, to grease the baking dish
- 150g castor sugar
- 2 eggs
- 1 tablespoon white vinegar
- 75g apricot jam
- 1 teaspoon bicarbonate of soda
- 1 cup (250ml) milk
Amarula Butterscotch Sauce
- 60g butter
- 150g castor sugar
- 2 teaspoons vanilla extract
- 1 cup (250ml) water
- 150ml fresh cream
- 150ml Amarula
The Cooking Method
Malva Pudding First!
- Preheat the oven to 180°C. Sift together the flour, baking powder and salt into a bowl.
- Cream the 100g butter and castor sugar in a stand mixer until light and fluffy. Then beat in the eggs and add the apricot jam and vinegar. Mix well. Dissolve the bicarbonate of soda in the milk and then add it to the butter and egg mixture together with the dry ingredients. Mix to form a batter.
- Pour the mixed batter into a greased baking dish or 8 individual ones and bake for 30 minutes in the preheated oven for 1 large pudding. If it becomes too dark, reduce the oven temperature.
- If you’re making individual malva puddings, the baking time will be shorter, 20 to 25 minutes, depending on the size and shape of your bowls. Once done remove from the oven and let it cool for 5 minutes.
For the Amarula Butterscotch Sauce
- Combine the 60g of butter with the rest of the remaining sauce ingredients in a small saucepan and bring it to the boil over a high heat. Boil for 3 minutes and remove from heat. Set the sauce aside until needed.
This recipe makes one large Malva pudding with Amarula butterscotch sauce can serve up to 8 people.
