What You’ll Need To Make Mushroom Rice With Grilled Chicken Breast
Grilled Chicken Breasts
- 4 Chicken Breasts
- 1 tbsp Cajun spice
- 1 tsp Paprika
- ¼ tsp Garlic powder
Mushroom Rice
- 2 tbsp Cooking oil
- 3 tbsp Butter
- 1 tbsp Rice spice
- 500 g mushrooms (sliced)
- 1 tsp fresh garlic (crushed)
- 1 cup long grain rice
- 2 ¼ cup chicken stock
- Spring onion (sliced to serve)
How To Make Mushroom Rice With Grilled Chicken Breast
- Place the chicken breast in a bowl, and pat dry. Coat the chicken breasts with 1 tbsp of cooking oil, and evenly sprinkle with Cajun spice, garlic powder, paprika, salt, pepper and set aside for now.
Mushroom Rice
- Take a large pot and heat 1 tbsp cooking oil and 2 tbsp of butter over a medium heat. Next, add in half the mushrooms, season with salt and pepper and cook for about 5 – 6 minutes until tender and browned. Remove from heat and set aside.
- Melt the remaining butter and add the remaining mushrooms and allow to cook for 5 minutes or until the mushrooms are lightly browned and add in the garlic and spice for rice.
- Finally, add the rice and combine everything together. Add and stir in the dissolved vegetable stock.
- Place lid on and bring to a simmer. Cook for 20 – 25 minutes.
Grilled Chicken Breasts
- Preheat a grill pan over a medium heat and coat the pan with little oil. Then, place the chicken on the grill for 7 – 8 minutes a side or until no pink remains. Rest 3-5 minutes before slicing.
- Remove from stove, and quickly stir in the reserved mushrooms, and green onions. Put the lid back on and leave for 5 minutes.
- Fluff the rice by using a wooden spoon and serve with the prepared chicken.
